Salmon baked in foil


Time: 20 mins
This is extremely easy, involves no washing up, and tastes delicious. The salmon ends up very moist.
  • Salmon fillets
  • Fresh herbs (dill is good)
  • White wine or water

  1. Remove the bones from the salmon fillets (I use a pair of pliers to do this - you can get a better grip than you can with eyebrow tweezers), and cut into portions if they're too enormous.
  2. Place on a piece of foil. Sprinkle with salt and pepper. Place fresh herb sprigs on top, or a bay leaf, or even dried herbs if you're stuck. Add a glug of white wine.
  3. Wrap up the foil tightly (this makes sure that all the moisture is kept in and the salmon cooks quickly).
  4. Bake at 200°C for 10-15 mins.

Suggestions: Serve this with sour cream, crispy bacon and chive sauce, or a yoghurt and mustard sauce, or a slice of lemon on the side.
