Potatoes and garlic baked in parchment |

Acknowledgements: Greens, who else. This is a great way of serving potatoes at a dinner party. Quick, easy, tasty and very impressive (to people who've never seen it before). |

Ingredients per person:
1 sheet baking parchment
4 or 5 small new potatoes (or old potatoes chopped up)
4 or 5 cloves of garlic
Small twig of rosemary
Olive oil
S&P;

Chop the potatoes if necessary to ensure that they are all roughly one inch across. Peel them or don't as you prefer. |

Put them in a bowl with the whole garlic cloves (again, you can leave these unpeeled if you wish). Drizzle with olive oil and toss thoroughly to ensure that everything is well coated. |

To make the parchment packages: fold each piece of paper in half; place the potatoes and garlic on one half, next to the crease; top with a sprig of rosemary and season well with S&P; fold over the other half of the parchment, and roll up the edges tightly to seal it (if you're worried it will pop open you could always staple it). |

Bake at 200°C for 30 minutes. |

Serve in the packages. |

If you choose to peel the garlic cloves (I usually do) you might find it helpful to warn your guests that not everything that looks like a potato actually is a potato. This could help avoid some unpleasant scenes. |
