Cabbage soup
This is the "Cabbage Soup Diet" cabbage soup. For more information about how to lose 7 lb in a week and never put it back on again (only kidding!), read my Cabbage Soup Diary.
Servings: 1 week's worth
Time: 1½ hours
- 6 onions
- 2 large green peppers
- 1 head of celery
- 1 large cabbage
- 2 cans tomatoes
- 1 can tomato paste
- Beansprouts, asparagus, mushrooms, carrots, leeks, fennel and garlic (optional)
- Seasonings: salt, pepper, stock cubes, Worcester sauce, Marmite etc.
- Find a HUGE saucepan. (Mine holds 8 litres and it would barely contain the essential items. The optionals had to be added later in the week.)
- Cut all the vegetables into small pieces. Add the tinned tomatoes, cover with water and add the seasonings.
- Boil quickly for 10 minutes, then simmer until the vegetables are tender.
